Banana + Pear

Hey there,

I'm back to blogging, yes I am!!! It's been a hectic few months lately but now that I am settled in our new home, new pastry job and new married life, I am now promising myself to blog more often and bake more often at our new home. Yes I bake at work and yes I still wanna bake at home, I might be addicted, just a bit.

So, what to bake in our new home with no mixer yet and not a lot of ingredients with me. Stick with the basics of course. We happened to have bananas and pears in the fridge and so it was obvious that banana bread with pear is the right thing to do.

Please forgive my photos since I am trying  my best to learn photography, since I kinda promise myself that I'm gonna be a better blogger then I should learn how to take better photos right? So this is the best I could do for the time being.

Also if you've noticed, my loaf sank in the middle, at first I thought it was because my crumbs was so heavy but then I realized I under baked it. Since we just moved, I don't have any toothpicks with me so I never got to test the cake if it was fully done. I just baked it again and though we all know that it's gonna be okay, its not gonna be the prettiest loaf in the world.












Banana Pear Loaf

3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1/3 cup buttermilk
1/2 cup vegetable oil
1 cup banana
1 3/4 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
1 cup pear (cubed)

1. Combine all ingredients in a bowl. (-yes that simple) 
2. Pour into a loaf pan
3. Top with crumbs 
4. Bake for 45-50 minutes or until toothpick comes out clean (trust me!)  350F 

Crumb topping
2 tbsp butter
1/2 cup all purpose flour
1/4 cup brown sugar
1/4 cup assorted nuts
1 tsp cinnamon
pinch of salt

1. Combine everything till it resembles a crumb like texture.
