Bourbon on your brownies?! Oh yes please

I will be honest with you, this is not the prettiest brownies you will ever see but come on, who doesn't like brownies with a little bit of alcohol in it. I don't care if it does not look pretty, if you say it's spiked then I'm goooood to go… Who's with me?!?

I've always been a fan of dessert with alcohol, I think they are a perfect match, just like coffee and chocolate, so why not combine everything and make a big chunk of brownie out of it.

Bourbon espresso brownie with dark chocolate caramel icing

1 cup unsalted butter
3/4 cup cocoa
1 tbsp coffee granules

2 eggs
1 3/4 cup sugar
2 tsp vanilla

1 3/4 cup All purpose flour
1/2 tsp baking soda
1 cup mixed nuts (optional)

Direction:

1. Melt butter, cocoa and coffee granules till smooth, remove from heat, add bourbon, cool and set aside
2. Combine eggs, sugar, vanilla, flour and baking soda
3. Add the chocolate mixture to the batter, mix till smooth
4. Add nuts, save some nuts for topping
5. Bake for 20-25 minutes at 350F or until toothpick comes out with a bit of chocolate sticking through it. ( Not wet chocolate though, it should be done but a bit sticky)
6. Top brownies with chocolate caramel icing, nuts, and espresso covered chocolate chips (regular chocolate chips will do ;-p)

Chocolate Caramel Icing

31/2 cup sugar
1/4 cup water
1/8 cup butter
1 tbsp bourbon
100g dark chocolate

1. Combine sugar and water in a saucepan. Do not stir, just make sure that the sugar is covered with water.
2. Wait till sugar melts and turns into a light auburn color
3. Remove from heat and add butter and chocolate
4. Add bourbon
5. Spread on top of the brownie and addc nuts and chocolate chips
