Strawberry upside down cake with red wine reduction

Alcohol dessert again??? Please do not think I am an alcoholic, I just love playing with liquor in my desserts, so be prepared for more desserts with alcohol in it. If you can't handle that then I guess we can't be friends. ;-p

I'm really loving all the fresh fruits here in Vancouver, I love the idea of seasonal baking wherein you find inspiration from seasonal fruits and make something amazing out of it. So I'm guessing aside from my obsession with liquor based desserts, I will be adding seasonal fruits to my collection as well. 







Strawberry Upside Down Cake

1/2 cup unsalted butter
1 cup sugar
2 eggs
1/2 tbsp vanilla
1 1/2 cup All purpose flour
1/2 tbsp baking powder
1/2 tsp salt
3/4 cup buttermilk


Red wine reduction

1/4 cup unsalted butter
1/2 cup brown sugar
1/2 cup red wine

Direction:

Melt butter, brown sugar and red wine in a saucepan, wait for it to thicken and has a sauce like consistency, set aside.

Slice strawberries and arrange them in the bottom of your pan.

Slowly pour the red wine reduction unto the strawberries, be careful not to ruin your perfectly arranged strawberries.

Preheat the oven to 350 degrees F.

Cream butter and sugar on middle speed for 5 minutes, or until light and fluffy.

Lower the speed of the mixer and add eggs one at a time, add vanilla.

Combine flour and baking powder and alternately add it with buttermilk (flour-buttermilk-flour-buttermilk-flour).

Carefully pour into the pan and bake for 35-45 minutes or until toothpick comes out clean.
