Chocolate Spread

Days are flying away while I daydream of all the desserts I want to make. This chocolate spread is one of those desserts I often dream of making but never got a chance to do so until now. A friend of mine at work, asked me to make him 60 chocolate spread for a wedding he was catering, he's instruction was simple : keep it boozy ! Boozy eh? I'm the right person for the job!

This is very versatile, you can play around with the flavors and it's as easy as pie!




Chocolate Spread

500l Heavy cream
500g Milk Chocolate disc
50g Unsalted Butter
2 tbsp Baileys

1. Boil Heavy cream in saucepan.
2. Add 1/3 of the cream to the chocolate and start mixing with a spatula. Boil again the remaining cream. 
3. Add another 1/3 of the cream to the chocolate, mix, and bring the remaining cream and butter to a boil. At this point, your chocolate is melted and has a thick consistency.
4. Incorporate all your cream and 2 tbsp baileys to your chocolate mixture, carefully mixing it without adding to much air bubbles.
5. Cover with the plastic wrap touching the top of the chocolate as to avoid condensation and skin. Refrigerate before serving. 

*** Feel free to use dark chocolate or a different kind of spirit :-)
