Banana Berry Buttermilk Muffin

Looking for an easy snack ideas?Well I'm here to help,  I'm a lazy mom and I try to find cheap, easy snack ideas not just for my toddler but for the whole family. I've had this pancake mix for awhile and I'm not fan of the taste and texture. It's really doughy and I feel like I have to put a ton of syrup to make it good. I was ready to throw it out but it's such a big package that it is such a waste. I hate throwing away food anyways so I figured I should just make something out of it. I have a ton of overripe frozen bananas and frozen mixed berries. So i just decided to try something out. It worked like a charm! It's not too sweet, just enough to curb that sweet craving. I'm excited to try a few more recipes with this one.



Banana Berry Buttermilk Muffin

200g (1 1/4cup) Kruzteaz Buttermilk Pancake Mix
200g (2/3 cup) Overripe Banana
50g (1/3 cup) Oat Milk or Regular Milk
25g (2 tbsp) Coconut sugar or Brown Sugar
50g (1/4 cup) Frozen Mixed berries

1. Mash overripe banana
2. Add Pancake mix and Milk, Mix well
3. Add frozen berries and sugar, mix until combined
4. Scoop on muffin cups
5. Bake for 20 minutes at 350F or until slightly golden
